Ingredients
1 kg meat (traditionally seal, whale or reindeer, alternatively lamb or mutton cubes)
1 large handful dried wild mushrooms
1 large lemon, grated zest only
1 teaspoon chopped rosemary leaves
1 teaspoon chopped sage
1 teaspoon chopped thyme
2 large carrots, sliced
2 litres water
3 large onions, chopped
200 ml arborio rice or barley
Sea salt and freshly ground black pepper

Method
1. In a large saucepan or casserole dish add the water
2. Before heating add the meat (raw, no need to brown), the vegetables, mushrooms, rosemary, thyme, sage and season with the salt and pepper.
3. Bring to a simmer on a low to medium heat and simmer for approximately 1 hour until the meat is tender
4. Add rice (or barley) plus the lemon until the dish thickens into a soup for 20 to 30 minutes.
